My friend Melissa sent me this recipe for this simple sandwich. She said it was the sandwich that always sold out first when she was in school and also this same sandwich sells out at a local place by her flat (she lives in London). She figured out how to make it herself and sent the recipe out to friends and family. It sounded "fab", so I had to try it!
I loved it so much I made it last night and tonight (hence the photo).
Here are her instructions: You'll need
--a loaf (or more depending on family size) of Ciabatta
--glass jar of pesto (red or green or both, try together for a fun twist)
--Mozzarella cheese
--Fresh tomato
--Slice the bread sub style (cut off individual rolls for ea. sandwich)
--Spread pesto thinly on both inner bread halves (remember, for a fun twist, red pesto on one, green on the other)
There is no need for butter or other spread as the olive oil warms from the pesto into the loaf, yummy!
--Layer with mozzarella and thinly sliced tomatoes.
--Warm in oven to melt the cheese and it's FINI!

She also mentioned that Pat, her husband the carnivore, likes to add ham. I added a little prosciutto. It was so good.
